You don&#8217;t need any of this stuff to enjoy real maple syrup at home. In 2015 I had done a cook very shortly after some very heavy sap collecting days. It was immediately apparent that I was out of the running right away due to two things:<\/p>\n<ol>\n<li>Density (worth 20 points) &#8211; score: 0 (57.1 Brix)<\/li>\n<li>Clarity (worth 15 points) &#8211; score: 0 (sugar sand &#8211; which you can clearly see in the photo)<\/li>\n<\/ol>\n<h2>Density<\/h2>\n<p>Syrup density is measured by a sugar content degree scale called <a href=\"https:\/\/en.wikipedia.org\/wiki\/Brix\" target=\"_blank\">Brix<\/a>. It&#8217;s measured using a hydrometer. I didn&#8217;t have a hydrometer for 2015, I simply went by the <a href=\"https:\/\/www.foell.org\/justin\/home-made-maple-syrup-part-2-cook\/\" target=\"_blank\">boiling temperature of somewhere around 219-221\u00b0F<\/a>. In competition, they&#8217;re much more precise:<\/p>\n<ul>\n<li>Below 66.0 Brix &#8211; 0 points<\/li>\n<li>66.0 to 66.9 Brix &#8211; 20 points<\/li>\n<li>66.9 to 68.9 Brix &#8211; 15 points<\/li>\n<li>Greater than 68.9 Brix &#8211; 5 points<\/li>\n<\/ul>\n<h2>Clarity<\/h2>\n<p>I was deducted in the clarity category for sugar sand. For the record, <a href=\"http:\/\/ouroneacrefarm.com\/make-maple-syrup-ii-boiling-filtering-canning\/\" target=\"_blank\">I do not mind sugar sand<\/a>, and neither do <a href=\"http:\/\/stillwatervalley.com\/in-season\/syrup\/\" target=\"_blank\">some other producers<\/a>. It&#8217;s really a matter of aesthetic. But so I can compete solely on flavor, I need to filter the sugar sand out of my competition batch(es).<\/p>\n<h2>Equipment<\/h2>\n<p>For the next competition batch, I purchased the following from <a href=\"http:\/\/www.sugarbushsupplies.com\/\" target=\"_blank\">Sugar Bush Supply<\/a>:<\/p>\n<ul>\n<li><a href=\"http:\/\/www.sugarbushsupplies.com\/2015_Catalog\/syruptesting.pdf\" target=\"_blank\">42 -0200<\/a> &#8211; Syrup Hydrometer, Dual Scale &#8211; Baum\u00e9 and Brix (45 -75\u00b0) &#8211; $14<\/li>\n<li><a href=\"http:\/\/www.sugarbushsupplies.com\/2015_Catalog\/syruptesting.pdf\" target=\"_blank\">42 -0300-S<\/a> &#8211; Slim hydrometer cup (8\u201d hgt, 1\u201d diam.) &#8211; $32<\/li>\n<li><a href=\"http:\/\/www.sugarbushsupplies.com\/2015_Catalog\/filtertankscanningunits.pdf\" target=\"_blank\">40-0100-F<\/a> &#8211; Hobby Filter Pack (1 Final Filter 18\u201d x 18\u201d,\u00a04 Pre-Filters 18\u201d x 18\u201d) &#8211; $8<\/li>\n<li><a href=\"http:\/\/www.sugarbushsupplies.com\/2015_Catalog\/glassbottlesandlabels.pdf\" target=\"_blank\">62-0008<\/a> &#8211; Syrup\u00a0Oval\u00a0with Handle,\u00a08 fl. oz. 28mm red leaf cap &#8211; 12 for $8.75<\/li>\n<\/ul>\n<p>Again, I&#8217;ll stress that if you&#8217;re not going to compete, none of this stuff is necessary.<\/p>\n<p>It was all about $75 after shipping. Sugar Bush Supply is rather old-school when it comes to ordering. You can <a href=\"http:\/\/www.sugarbushsupplies.com\/online_catalog.html\" target=\"_blank\">view their catalog<\/a> on their website, but you have to call, fax, mail, or email in your order.<\/p>\n<h2>Other Categories<\/h2>\n<p>The other two categories, color and flavor, account for 15 and 50 points, respectively. Color is somewhat of an educated guess. The <a href=\"http:\/\/www.sugarbushsupplies.com\/2015_Catalog\/syruptesting.pdf\" target=\"_blank\">tools to accurately grade color are far more expensive<\/a> than the tools above. I give it a good guess on color: light, medium, or dark amber and call it good.<\/p>\n<p>Flavor is where the real competition is, but I believe you need to have a full score in the other categories if you want to vie for a ribbon.<\/p>\n<p>I&#8217;m not even sure if I&#8217;ll be able to compete in the state fair\u00a0this year, as the weather has been very strange:<\/p>\n<blockquote class=\"twitter-tweet\" data-width=\"550\">\n<p lang=\"en\" dir=\"ltr\">We went right from no days above freezing to no nights below it.
